At Maine Arts Camp, Culinary is so much more than just following a recipe. In the MAC kitchen, campers have a ton of fun while learning real techniques, build confidence, and discover how creative cooking can be. From fresh pasta dishes to baked goods, savory meals to sweet treats, our culinary activities cover a wide range of skills and flavors. Campers don’t just cook. They experiment, problem solve, collaborate, and learn how to make a variety of delicious dishes.

Culinary at MAC builds independence, teamwork, time management, and comfort in the kitchen. And it tastes pretty great too.

Make “Fridge Slop Pasta”, aka veggie pasta, with me! What would you put in your fridge slop?

FRIDGE SLOP (AKA, Veggie Pasta):

3 oz. salami, cut into strips

1 pint cherry tomatoes

3 cups any leafy green vegetable like spinach, kale, or escarole

16 oz dried pasta, any shape

2 cups grated parmesan

Salt to taste

2 tbsp Olive oil

  1. Heat a large pot of water with a heavy pinch of salt (about 1 tbsp). When it begins to boil, add your pasta. Cook according to directions on the box.
  2. Heat the olive oil in a pan over medium/high heat. Add the salami and tomatoes and cook for 10-15 minutes, stirring occasionally. The salami should get crispy and the tomatoes should start to break apart and feel extra soft.
  3. When the pasta is ready, drain the water. Save some in a measuring cup. This will help to make the sauce!
  4. In the large pot over medium heat, mix the pasta with the salami & tomatoes. Add the greens and stir, allowing them to get soft and wilted.
  5. While stirring, add the parmesan cheese. You can add a few splashes of the pasta water to help melt the cheese and make it saucy!
  6. Keep stirring until the cheese has melted and formed a sauce. It should cling to the pasta.
  7. Enjoy!

Try mixing it up with different veggies or different types of cheese! The great thing about a “Fridge Slop” pasta is you can customize it with what you have on hand.
